Any Easy Quick meal for lunchtime or when you are feeling pushed for time. You can enjoy this meal knowing that its a heathy choice. Great for school lunches, kids will love putting them together themselves.


  • Pita Bread (buy the one with the least amount of ingredients on the list)
  • 1 cupWhat every salad and or vegetables you have on hand.
  • Drizzle Salad dressing
  • 30g/small hand full nuts (think little old lady hand!!)
  • If you enjoy a cheese flavour add a sprinkle of nutrition yeast


  1. In a small bowl, combine chopped cauliflower and broccoli florets, sliced green onions, and diced tomatoes and cucumbers (any salad and vegetables you have handy.
  2. Cut a whole-wheat pita in half and fill each side with the vegetable mixture.
  3. Warm the pita in the microwave for about 40 seconds.
  4. Top with salad dressing, and some seeds or small handful of nuts and nutritional yeast if you choose.
