Becoming plant-based has opened me up to a whole new world of sandwich's, spreads are a key addition providing much, much more than just a bit of moisture on the underside of the bread, they can be a nutritious addition to whole grain bread. (Adapted fromOne Green Planet)

  • 1 can chickpeas, drained and rinsed (or 1 3/4 cups chickpeas)
  • 2 medium garlic cloves
  • 3 tablespoons lemon juice (from 1 lemon)
  • 2 tablespoons tahini (I leave this out we do not like the taste)
  • 2 tablespoons olive oil
  • 1/2 teaspoon fine grain sea salt, or more to taste
  • Water as needed (Use 2-3 tablespsoons)

  1. Add garlic to the food processor and pulse a few times to mince.
  2. Add the remaining ingredients, except for the water.
  3. Process until smooth, about 1-2 minutes, adding water as needed.
  4. Store in the fridge in an airtight container for up to 3-4 days.
  5. The garlic taste settles when refrigerated.

You could also top it with smoked paprika and sesame seeds. For a lighter garlic taste, start with only one garlic clove and add more as needed, we love garlic!!
