This pancakes are well worth the effort, after one hour in the oven, the oats turn completely purple from the cherries and blueberries and every serving is nice and sweet, without any added sugar. After the pan cools, you can cut the oats into squares, EXCELLENT for kids lunches too!!

Ingredients

  • 1 cup steel cut oats (rolled oats are ok)
  • 1 quart unsweetened vanilla nut milk
  • 1 cup frozen cherries
  • 1 cup frozen blueberries
  • 2 tsp cinnamon
  • Fresh fruit, sliced (optional)

Instructions

  1. 1 Preheat oven to 350 degrees F.
  2. 2 Mix all ingredients together in a 9 inch x 13 inch pan. Bake for one hour. To serve, top with extra fresh fruit, if desired.
  3. 3 Cooled leftovers can be refrigerated in a covered container.
