This meal can be a super quick and easy meal if you are using already cook barley, we recommend that when you are making barley (any grains) you make extra so you can just grab and make.

Ingredients

  • 1 sliced cucumber,
  • 2/3 cup cooked barley,
  • 1 cup cooked corn
  • 3/4 cup chopped red bell peppers.
  • Dressing;
  • combine 3 tablespoons white wine vinegar,
  • 1 tablespoon water,
  • 1 1/2 teaspoons oil,
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon pepper

Instructions

  1. Cook Barley Combine barley and * water in a pot and bring to a boil.
  2. Reduce heat, cover and simmer until tender
  3. * barley-to-water ratio (1 cup barley to 3 cups water)
  4. In a bowl, add 1 sliced cucumber, 2/3 cup cooked barley, 1 cup cooked corn and 3/4 cup chopped red bell peppers.
  5. For the dressing, combine 3 tablespoons white wine vinegar, 1 tablespoon water, 1 1/2 teaspoons oil, 1/2 teaspoon dried basil and 1/8 teaspoon pepper.
  6. Stir the dressing into the barley mixture.
  7. Marinate the salad for at least 2 hours before serving.

Barley Cooking time: pearled, 45-60 minutes; hulled, 90 minutes Barley-to-water ratio (1 cup barley to 3 cups water)
