COCONUT BANANA PANCAKES

These YUMMY pancakes are LOW carb and easy to whip up as a breakfast or sweet treat, even for the kids to take to school.

Total: 20 minutes
Serves: 2

Ingredients

  • 2 ripe bananas
  • Flax egg (2Tbsp ground Flaxseed in 1/2 cup water, mix and set in fridge for 10mins)
  • 40g desiccated coconut
  • 1/2 tsp cinammon
  • 1 punnet berries
  • 1/2Tbsp coconut oil (or if you have a good non stick pan water fry)

Instructions

  1. Mix the banana and flax egg until smooth
  2. Whisk in the flour, coconut and cinnamon, then fold in berries
  3. Let in sit for 10 mins
  4. Heat pan to med heat
  5. Ladle or pour in blobs of batter in pan, let them set, before turning over to cook remaining side
  6. Let cool before serving with more berries and or banana and ENJOY
  7. OR if have as a sweet treat add coconut ice cream
