Chia seed pudding make a WONDERFUL dessert or wholesome breakfast. Top with fresh berries or your favourite fruits and a small handful (30g) nut. Packed with Omega 3's and LOADED with protein, in this meal ALL your bases are covered!

Ingredients

  • 2 cups fortified un-sweetened nut milk
  • 1/4 cup soft dates
  • 1 teaspoon vanilla extract (or vanilla powder)
  • 1/4 cup chia seeds
  • TO CHANGE IT UP; ADD 1/4 cup cocoa powder.

Instructions

  1. Pop the milk, dates and vanilla into blender and process until smooth
  2. Add the chia seeds and pulse until seeds are distributed throughout liquid but NOT blended
  3. Transfre to storgage container, cover tightly and refrigerate for at least 2 hours or over night (we make a couple of batches).
  4. Before serving give it a stir to mix up any lumps
  5. Add fresh fruit ENJOY
