This is a Super Healthy way to enjoy the occasional sweet food, and they wont even know its Healthy..... This is one of our Family favourites Enjoy It also freezers so I make bulk and store it was so I do not have make each time EASY!

Ingredients

  • 200g dark (bittersweet) chocolate, chopped, I use 90% Lint
  • 1/4 c. unsalted vegan butter or coconut oil
  • 1 can black beans, drained and rinsed
  • 3/4 c. cooked sweet potato flesh
  • 1/3 c. maple syrup or honey
  • 1 tsp. vanilla extract
  • Pinch salt

Instructions

  1. 1. Preheat oven to 180*. Line an 8-by-8-inch baking pan with parchment paper, with ends overhanging the sides. Line with baking paper.
  2. 2. In the top of a double boiler simmering water, melt chocolate and oil or butter until smooth. Meanwhile, in a food processor, puree black beans, sweet potato, syrup, vanilla, and salt. Add chocolate mixture and process until smooth.
  3. 3. Pour batter into pan and bake until brownies set in the centre and pull away from the edges, 40 to 45 minutes. Cool completely before using the parchment paper to remove brownies from the pan.
  4. TIP: To prepare the sweet potatoes needed for this recipe, pierce with a fork, then bake at 180* until tender, about 45m/1 hour. Baking them adds to the sweetness. Scrape out the flesh from the skin and you're ready to go.
  5. THIS RECIPE FREEZES WONDERFUL.
